Fruit Salsa

This fruit salsa is easy to adapt to use whatever fruit you have on hand. It comes together fairly easily, if you don't mind a bit of chopping, and it's always a hit with friends and family.

Ingredients

  • 1 pound strawberries
  • 2 kiwi
  • 8 ounces canned pineapple tidbits or freshly chopped pineapple
  • 6 ounces raspberries
  • 6 ounces blueberries
  • 3 tablespoons strawberry jam
  • 1 tablespoon brown sugar

Instructions

  • Rinse all of the fruit well. Peel the kiwi.
  • Chop everything into small uniform pieces.
  • Add all of the fruit to a mixing bowl with the strawberry jam and brown sugar. Stir gently to combine.
  • Cover tightly and refrigerate for 30 minutes before serving.
  • Serve with cinnamon sugar pita chips.

Notes

To make your own cinnamon sugar chips, brush tortillas or pita bread with melted butter and sprinkle with a mixture of cinnamon and sugar. Cut into small triangles and place in a single layer on a large baking sheet. Bake for 10-15 minutes or until crisp in a 350 degrees. The chips will crisp even more as they cool.
