Dill Pickle Ham Salad
This dill pickle ham salad is an easy way to use up some of that leftover ham! My recipe is a creamy mixture of finely chopped ham, pickles, boiled eggs, onions, and herbs. Perfect on a croissant, but it's also good in a lettuce wrap, if you'd prefer to keep it low carb.

1 pound cooked ham 2 hard boiled eggs, chopped ½ cup mayonnaise ¼ cup chopped dill pickles 2 tablespoons chopped sweet onion 2 tablespoons yellow mustard 2 tablespoons chopped fresh dill 2 tablespoons chopped fresh parsley 1 tablespoon white distilled vinegar Cracked pepper to taste 6 croissants
Add the ham to a food processor and process until finely chopped. Alternately, chop the ham by hand, being sure to chop it into very small pieces.
Add the ham to a mixing bowl with the remaining ingredients and stir together until combined.
Spoon salad evenly between the croissants to make sandwiches.
Make this sandwich low carb by replacing the croissants with lettuce wraps or low carb tortillas.
This also makes a great dip for crackers.
