Instant Pot Sweet Potatoes
Baked sweet potatoes made easy in the Instant Pot!

- 4 medium sweet potatoes
- 1 cup water
Wash the sweet potatoes well. Poke them a few times with a fork so they don't explode while cooking.
Add the trivet to the Instant Pot and add 1 cup of water. Place potatoes on the trivet. The potatoes should not be touching the water.
Cook on high pressure for 17 minutes.
Allow Instant Pot to release pressure naturally for 10 minutes and then do a quick release.
Potatoes may keep warm in the Instant Pot for an hour or you may wrap them tightly and store them in the fridge for future use.
