Waffle Iron Barbecue Chicken Sandwich

These waffle sandwiches are so much fun I can hardly deal! With just a few simple ingredients you can have a seriously fancy sandwich. Sure, it's only fancy because it's waffled, but whatever. I still call that fancy, don't you?

Ingredients

  • 1 cup cooked shredded chicken breast
  • 3 tablespoons barbecue sauce
  • 4 slices sourdough bread
  • 4 slices sharp cheddar cheese
  • 2 tablespoons olive oil

Instructions

  • Preheat the waffle iron.
  • In a small bowl, stir the barbecue sauce and chicken together to coat.
  • Brush one side of each slice of bread with the olive oil.
  • Lay one slice of bread, oil side down, on the waffle iron. Top with one slice of cheese and half of the chicken.
  • Top with another slice of cheese and the other slice of bread, oil side up.
  • Gently press the waffle iron closed. Cook the sandwich for 3 minutes or until bread is slightly crispy.
  • Repeat with the remaining sandwich.
