With the fresh flavors of dill and the savory goodness of roasted garlic, this ricotta dip is perfect for spring get togethers. We like to serve this with an assortment of crackers, breads, and fresh vegetables. It's also a welcome addition to any charcuterie tray.
Crostini, fresh vegetables, chips, crackers for dipping/spreading
Instructions
In a medium bowl, combine the cheese and dill. Squeeze the entire head of garlic into the mixture. Add one teaspoon of olive oil and the salt. Stir well to combine.
Place in a serving bowl and drizzle with the remaining teaspoon of olive oil.
Serve spread on crostini or as a dip for vegetables, chips, or crackers.
Notes
To roast garlic, preheat your oven to 400 degrees. Start with a whole head of garlic. Remove the papery outer layer and then use a knife slice off about a 1/2 inch of the top of the cloves. Drizzle some oil over the top and then either wrap it tightly in aluminum foil and place on a baking sheet, or put the head of garlic into a muffin tin and cover that with some foil. Roast for 30-40 minutes or until the garlic is brown and soft.
