I went ahead and made one of my favorite sandwiches in all of the land for you guys. It's full of my favorite pimento cheese recipe. And then, because I'm nuts, I also add some perfectly crispy and crunchy fried green tomatoes.
Heat a large skillet over medium heat until hot. Spray with non-stick cooking spray.
Butter one side of each slice of bread.
Place one slice of bread, butter side down, in the hot pan. Top with 1/2 of the pimento cheese. Add one fried green tomato and top with the remaining pimento cheese. Place the second slice of bread on top, with the butter facing up.
Cook until the bottom is golden brown and flip. Continue cooking until the bottom is golden and the cheese has melted.
