Maple Bacon Sweet Potatoes

You're going to love how simple these are to make. Even my non-sweet-potato-lovers enjoyed this recipe. I think it has something to do with the maple and the bacon. I mean, duh.

Ingredients

  • 3 large sweet potatoes
  • 2 tablespoons pure maple syrup
  • 1 tablespoon olive oil
  • 3 slices bacon fried and chopped
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  • Preheat oven to 425 degrees.
  • Peel and wash the potatoes and dice into bite sized pieces. Place potatoes on a foil lined baking sheet.
  • Add the maple syrup and olive oil to a small bowl and whisk to combine. Pour mixture over the potatoes and toss to coat.
  • Place in oven and bake for 20 minutes, stirring halfway through.
  • Remove from oven and sprinkle with bacon, parsley, salt, and pepper.
