These oatmeal bars are packed with white chocolate and dried cranberries. They’re soft, chewy, and completely addicting. 


  • 2 1/2 cups old fashioned oats
  • 2 cups flour
  • 1 1/2 cups brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon vanilla
  • 2 large eggs
  • 1 1/4 cups butter melted
  • 1 cups white chocolate chips
  • 1 cup dried cranberries


  1. Heat oven to 350 degrees. Spray a 9x13 baking dish with non-stick cooking spray or line the pan with parchment paper.
  2. Add everything but the white chocolate chips and cranberries to the bowl of a stand mixer and beat until just combined.
  3. Stir in the white chocolate chips and cranberries by hand.
  4. Spread the batter into the prepared baking dish.
  5. Bake for 25 minutes or until a tester comes out with just a few moist crumbs. Bars should look slightly underdone.
  6. Let cool 1 hour before cutting into bars.
