Red Velvet Gooey Butter Cake

Have y'all ever had regular Gooey Butter Cake? It's pretty fabulous. Just a regular cake on the bottom, but the topping is just plain amazing. It's gooey and buttery.

Ingredients

For the cake:

  • 1 box red velvet cake mix
  • 1 large egg
  • 8 tablespoons butter melted

For the filling:

  • 8 ounces cream cheese softened
  • 2 large eggs
  • 1 teaspoon vanilla
  • 8 tablespoons butter melted
  • 16 ounces powdered sugar about 4 cups

Instructions

  • Preheat the oven to 350 degrees.
  • Combine the cake mix, egg, and butter and mix well. It will be thick and difficult to mix. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.
  • In the bowl of your stand mixer, beat the cream cheese until smooth. Add the eggs, vanilla, and butter and beat together. Add the powdered sugar and mix until completely combined.
  • Spread the cream cheese mixture over cake batter and bake for 40 to 50 minutes. Make sure not to over bake as the center should be a little gooey.
