Easy Pork Stir Fry

Ingredients

  • 1 pound pork sirloin
  • 2 tablespoons vegetable oil
  • 2 cups chopped broccoli
  • 2 cups chopped bell peppers
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1/4 cup honey
  • 3 cloves garlic minced
  • 1 tablespoon hoisin
  • 1 tablespoon minced ginger
  • 2 teaspoons chili paste

Instructions

  • Heat a large skillet or work over medium high heat with the vegetable oil.
  • Slice the pork thin and add to the skillet with the hot oil. Cook, stirring often, about 3-4 minutes or until browned.
  • Stir in the broccoli and peppers and let cook for 3-4 minutes.
  • Stir together soy sauce, vinegar, honey, garlic, hoisin, ginger, and chili paste in a small bowl. Add to pan and stir to coat the meat and vegetables in the sauce. Cook 5 minutes, stirring often, until vegetables are tender-crisp and pork is cooked through.
  • Serve immediately.

Notes

We kept it simple with broccoli and peppers as those are two veggies that I know my family will eat. Feel free to mix in thinly sliced carrots, diced onion, sugar snap peas, cauliflower, or baby corn. Keep the vegetables to around 4 cups or increase the sauce accordingly.
We prefer to serve this over rice, but it's also delicious on it's own, if you're trying to keep it more low carb.
