Apple Cheddar Crositini

Apple Cheddar Crositini recipeHave I ever told you about the time I worked as a waitress?

It was my first job and I started out as a bus boy (bus girl?) clearing tables. This job is actually where I met my husband. I was 15 and thought he was kinda cute, but was never really that interested until he got his hair cut short. And then? It was on. I stalked the poor guy. Stalking works, apparently. We’ve been married for 13 years!

Anyway! I started waiting tables a few months in which was much better than clearing tables. There were tips involved! And I wasn’t the one touching the used silverware or carrying heavy trays of dirty dishes!

I’ll never forget the first time someone ordered a slice of apple pie and asked for a piece of cheddar on top.

I thought he was joking and laughed it off and then brought him his pie without the cheddar.

People, I had no idea cheddar on pie was a thing! I thought ice cream was the way to go! As a young teenage girl who was still somewhat picky, I was thoroughly disgusted by the idea of cheese on pie.

Aaaaand, then I grew up. Cheese + Pie = True Love. Apple Cheddar Crositini recipe

I didn’t make you guys a pie today though. I wanted to keep things simple with an easy snack that everyone is going to love! Apple Cheddar Crostini…these little bites are the perfect after school snack for kids, but they’re also totally fancy enough to set out before a big holiday dinner or party. My kids and I love easy snacks like this.

I’m using Cracker Barrel’s rich, authentic cheddar to top my apples. I’ve already told you that Cracker Barrel is an award winning cheese, but I don’t think we’ve talked much about why it’s so fabulous! The flavor is perfectly sharp due to their unique aging process and the cheese is wonderfully creamy and smooth from the addition of cream. I mean, hello. Cream makes everything better.

Apple Cheddar Crositini recipe

If you haven’t tried Cracker Barrel yet, you really must. This isn’t one of those, “oh, it’s cheddar, I know what cheddar tastes like” cheeses. This is a unique cheddar that is a bit hard to describe. It’s worth tasting for yourself! The smooth texture and sharp bite are sure to make you fall in love.

As always, when you’re making such simple dishes like this Apple Cheddar Crostini, it’s important to use good quality ingredients. I’m using fresh, crispy Honeycrisp Apples, a good quality baguette, and my favorite Cracker Barrel Aged Cheddar Cheese. Feel free to mix this up with your favorite flavor of Cracker Barrel cheese and variety of apple.

Karly you are not the only one who changed her tune after the man cut his hair. When Ben gave up his “cool (translation: not cool) hockey hair,” I was all over it, lol. Cheddar + apples is one of my fave combos and the sharper the cheese, the better!

I like to serve cheese at room temp after main course and before dessert, is a great way to finish off the wine from the main course. Cracker Barrel is my favorite cheese as well. I love the Extra Sharp Cheddar!

I still haven’t attempted the cheese on pie thing yet. Does that make me a foodie wimp? Maybe. But maybe I should start with crostini first and ease my way in.

My favorite way to serve cheese? On a big platter with some nuts and dried fruit. A sliced baguette or crackers on the side, a nice wine, and that just might be dinner.

I use Cracker Barrel all the time! Most of their cheeses contain zero grams of lactose- good news for my belly. :D I used some tonight to top a grilled chicken breast, then piled on avocado slices and pineapple mango salsa. OMG, tastiness!

So many ways I love to serve cheese! Love to have cheese, sausage and crackers when we have company. My favorite egg casserole has a delicious homemade cheese sauce mixed in, which is what makes it better than any other egg casserole, in my opinion. I love eating colby jack cheese with pear slices for lunch. Oh and the fall is perfect for grilled cheese sandwiches. Hmmmm, now I’m hungry.

Oh yes, it’s the only way to eat Apple Pie with a slice of cheese on top, melted ~ especially Dutch Apple Pie (drooling here…). I’ve never had ice cream on apple pie. Maybe it’s an east coast thing? Most of my kinfolks do the cheese on apples. Cheese is a staple in our home and we have at least 4 different kinds in any given day. I love to add cheese in my creamed soups, adds a bit of thickness, while it enhances the flavor at each spoonful.
