Chocolate Chip Peanut Butter Cheesecake Bites
I just went through my photos of recipes that I have to share with you guys, and I hope y’all like chocolate and peanut butter.
My brother? He does not like peanut butter. He does not like Reese’s. REESE’S. Who does not like Reese’s? And how am I related to that person?
This is his birthweek, so I thought it would be fun to have CHOCOLATE PEANUT BUTTER WEEK in his honor. Because I’m his sister and it’s my job to annoy him. Also, he doesn’t read my blog, so it doesn’t really matter if I celebrate his birthweek with something he dislikes.
Y’all ready for this? Chocolate Peanut Butter Week. It’s happening. (We’re getting started a bit late, because my site was being all crabby today and wouldn’t let me upload photos!)
Up first we have easy Chocolate Chip Peanut Butter Cheesecake Bites. They’re no bake, because it’s hot out and I thought I’d give you a break from the oven.
(I apologize for the hideous photos. I must have taken these with my eyes closed, but I wanted to share the recipe anyway because it’s a keeper.)

Chocolate Chip Peanut Butter Cheesecake Bites
Ingredients:
1 cup crushed chocolate wafer cookies
4 tablespoons melted butter
1/2 teaspoon gelatin
8 ounces cream cheese, room temperature
7 ounces sweetened condensed milk
1/4 cup peanut butter
1/2 cup mini chocolate chips
Directions:
Mix cookie crumbs with butter and press into an 8x8-inch dish.
Combine gelatin with 1 tablespoon of water and let sit 5 minutes.
Meanwhile, beat cream cheese, condensed milk and peanut butter.
Microwave gelatin 20 to 30 seconds to melt and beat into the cream cheese mixture. Stir in the chocolate chips.
Pour batter into the dish and freeze for 20 minutes. Cut into bite-size squares.

Look at that luscious topping. Like it needs my fingers or face in it or something. Awesome.
Also, for awhile I didn’t like PB either. I don’t know what was wrong with me, but perhaps someone clubbed me over the head one day because now I enjoy it. We should celebrate my turning point with these bars!

I don’t think your brother and I would get along. Reese’s are at the bottom of my food pyramid….! Love love loving this combo, Karly! I have cookie dough cheesecake bars coming up on my blog soon. Kinnnnnnnnda sorta wish I added PB now.

I don’t like peanut butter, either. I think you are ruining perfectly good chocolate here. However, I like the idea of making something that my kids will like that I won’t want to eat. So, yay!

Okay, I’m not sure I understand this concept of not liking Reese’s. How is that even possible??? But I”m all in for chocolate peanut butter week!

Incidentally, I don’t have chocolate wafer cookies in the house, and the outrageously overpriced grocery store that is super close to my house charges like $5.00 for a box of 24 cookies, which comes out to… oh crap, I hate math.
So anyway, I think I’ll use Meyer lemon wafer cookies… but peanut butter with lemon? Nah… so maybe I’ll use Nutella. Crap…now I’ve just changed your entire recipe. But I love you. For reals. <3

That said, don’t be so sure about the “he doesn’t read my blog anyway”. My brother is always popping up places where he doesn’t belong, doing totally shocking things.

Also, I brought chocolate cupcakes with peanut butter fluff frosting to work last week. Normally when I bring cupcakes they take a few days to disappear. THREE DOZEN gone by the next day with less than 15 staff, all of whom CLAIM to be dieting ALL THE TIME.

My brother doesn’t like pb either .. can’t figure that out .. especially when I make my pb balls dipped in chocolate every Christmas… he mutters something about texture .. but who can resist pb, chocolate, and cheesecake .. no one I know …
I have one son who loves peanut butter but hates jelly and one that loves jelly and hates peanut butter. Both hubby and I love peanut butter and jelly. How weird is that? I agree your brownies look hideous, but my mother made lots of hideous looking treats that tasted awesomely delicious. We didn’t care. She used to call our birthday cakes ugly cakes. We always wondered what shape it would be in when it was time to eat it.
