You know how some people substitute applesauce for oil in recipes?

I’m clearly not one of those people.

I took a perfectly good, healthful-ish banana bread recipe and I did all sorts of crazy things to it. Things that are quite possibly illegal.

I got it in my head to make a Hot Fudge and Peanut Butter Banana Bread. Sounds good, right? Then I reached for the peanut butter and my hand knocked into the jar of Fluff and sent it flying out of the cabinet.

It was a sign, you guys. Probably from Jesus himself.

I slathered my bread slices in extra peanut butter, but I think some warm hot fudge sauce would make a great topping.

Hot Fudge Fluffernutter Banana Bread

Ingredients:

1 cup mashed bananas
2 eggs, beaten
1/2 cup vegetable oil
1/3 cup buttermilk
1/2 cup peanut butter
1 1/4 cups white sugar
1 3/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup hot fudge sauce, warmed
1/2 cup marshmallow fluff, warmed

Directions:

Preheat oven to 325 degrees. Spray a 9x5 loaf pan with cooking spray.
Beat together the banana, eggs, oil, buttermilk, and peanut butter.
Stir together the sugar, flour, salt, and baking soda. Add to the banana mixture and stir until just combined.
Pour half of the mixture into the prepared loaf pan. Pour half of the hot fudge and fluff evenly over the banana mixture and swirl with a knife.
Pour the remaining banana mixture in the pan and top with the remaining hot fudge and fluff. Swirl with a knife.
Bake for 1 hour and 15 minutes or until a cake tester comes out clean.

Seeing as how I’m totally the girl who put reese’s into her banana bread last week (and then ate the remaining 11 oz of them that were in the bag)…I’m not an applesauce-for-oil kinda gal either. And I’m totally an add fluff to everything one. Loving this.

AMAZING combo right there.

random question, what program do you use to “write” on your images? I just blogged about this question because picnik is closing and I dont use flickr/picassa (another uploading step)…was just curious what your go-to is.

  Averie, I use Photoshop CS5. Photoshop Elements would probably be all that you need, though.

Oh I’m totally that applesauce for oil girl…then I’d add yummy “junk” like you just did. Cause that applesauce is totally going to cancel out the fluff/pb/chocolate/12lbs of sugar.

When you say “swirl” do you mean swirl like marble or swirl on the surface?
Also, you have completely cured my aversion to the peanut butter/banana combo.

So I went to make this tonight (see above) but I stopped and looked and there is no leavening. Is that correct? Or is there supposed to be baking soda/powder somewhere in there?
