Pickle Dip
Let’s pretend for just a moment that I’m sharing this recipe with you for the Superbowl or some other super important get together where there will be many people clamoring for dip.
Let’s pretend that I have never in my life made this in preparation of a night of television watching with just me, my chips, my dip, and an overly full DVR.
You see, people aren’t meant to eat a half of a pound of cream cheese all by themselves in one sitting. So, we’re pretending I didn’t do that. Got it?
I know the two words “pickle” and “dip” don’t necessarily sound like they belong together, but the thing is that this is my most favorite dip of all time. It literally takes about 2 minutes to whip up, it’s utterly fabulous at room temperature (no chilling, no baking, no worrying about the temperature), and did I mention that it’s just plain amazing?
So, go ahead and pretend that you have a house full of people, make some dip, and then pretend like you aren’t the one eating it all yourself. Imagination is good for the soul.

Pickle Dip
Ingredients:
8 ounces cream cheese, at room temperature
1/2 to 1 cup dill pickles, depending on how pickly you like things
1 tablespoon Worcestershire sauce
dill, for garnish, if desired
pickle juice
Directions:
Chop the pickles into very small pieces.
Combine with the cream cheese and Worcestershire sauce until well mixed. Splash in a bit of pickle juice to thin the dip out a bit (around 1 tablespoon, but more is fine, dependent on your taste).
Serve cold or at room temperature with potato chips.

We make a pickle dip thats just like the pickle wraps. just cream cheese, chopped dill pickles and diced corn beef. its so good. But then I love pickle wraps so I could easily eat this with a spoon. LOL

Natalie, yes! I have had dill pickle chips and yes, this dip is 100 times better!
I meant this DIP would be better than the chips. Cream cheese trumps most things.
Are you SURE there’s no bun in that oven of yours?

Looks fantastic! You can even call it healthy if you use cultured cream cheese (Organic Valley has a good one,) and cultured dill pickles (Bubbies brand-refrigerated only.) Loaded with probiotics!

OK, and I’ll pretend that I haven’t been eating a bowl of this each night for the last three nights. oops!
Although, I don’t use worcestershire sauce, and I add pickle juice to the cream cheese to make it thinner (got the recipe from a co-worker). then we refrigerate it for a bit and it thickens up. I love it with salt and vinegar chips. YUM!
Why oh WHY did you introduce this to me?! I am pretty sure I could plow through an entire block of cream cheese in no time. Yum!

This is my new favorite dip, I’m so glad I stumbled upon this little gem. My inner-weirdo added shredded cheddar to this and I can not stop eating this!!

It’s Monday. You deserve a half pound of cream cheese and some pickles.
This tastes super yummy and I’m thinking it would make a great filler for flour tortilla pinwheels. Slather it on, roll it up and slice into disks! Yummy appetizer!
I love this dip. I faster and equally simple way to achieve virtually the same result is to use dill pickle relish. It has the pickles and pickle juice together already and gives the texture that the dill adds. Again, either way I love this dip.
Just when I thought there was nothing better than drinking pickle juice straight out of the jar, you throw cream cheese into the mix and make my heart go pitter patter. Mmmmmmmmmmm.

Silly question – I have a friend who wants chips for her birthday, instead of a cake. do you think if I made this recipe and put it in a sprinform pan in the fridge, it will hold enough on it’s own when i take it out of the fridge and remove the springform side? I was going to top it with dill pickle chips too, to make it pretty.

First of all, if you do this, I insist that you send photos! So funny! Love your creativity.
And second, I do think it would work. Watch the amount of pickle juice you add so that it doesn’t get too wet, but otherwise it should be fine. I think it tastes best after it’s sat out for 30 minutes or so to soften, so you’ll have to just see how that goes.

I can’t wait to try. This may be better than Mayfields French Onion!?! My imagination thanks you. If you like this you should try this appetizer. Take a piece of crustless white bread & spread a thin layer of cream cheese on it. Take a whole dill pickle & pat dry with a paper towel. Lay the pickle on the end of the bread & roll up til the pickle is completely wrapped. Chill for a little, maybe an hour. Then take a sharp knife & slice like pennies into bite-sized pieces. Delicious & simple! Thanks for the post.

That sounds amazing!
LOVE the idea, but to make it healthy swap out the cream cheese for greek yogurt. Greek yogurt is so much better for you especially if you get the 0% milk kind, you won’t need to feel so guilty about eating it all yourself. Plus its slightly sour so it would add to the pickle flavor better.

I just made this to take on vacation (we leave today) and ohmygoodness!!! If the chips weren’t already packed it would be half gone.
This sounds awesome! You should try using dill pickle relish which is basically pickles already chopped in small peices. It save even more time and would get the dip made faster so that its less time that you have to wait to enjoy this yummy stuff!

OMG! Where has this been all my life?!?!?! I came across this recipe and took pause. Pickle dip and chips? Hmmmm, why the heck not. We whipped up a batch for a party and have serious reservation about this lasting until our party tomorrow. This is absolutely the most amazing dip we have ever scooped onto a potato chip. I should mention that I did alter this recipe and added a dash of white truffle salt, white pepper and dill. Amazing!!!! Thanks for sharing!
For a lady who can’t tolerate cream cheese (me – I know, it is sad. I can’t eat cheesecake or anything without getting a major tummyache.), what would you recommend as a substitute for the cream cheese? I’m not much better with yogurt – and sour cream is only a small doses acceptable food. Could I use something like laughing cow spreadable swiss? Just curious what you might recommend! Thanks in advance.
