Pumpkin Donuts {And a Thank You!}

Have I mentioned lately how much I love all of you?

I love the sweet comments you leave me here, the debates you help me settle on Facebook (such as watermelon: salted or no?), the tweets you tweet me, the way you pin my photos and stumble my recipes. I love all of that and I love you.

Sorry. I might be a little hormonal right now. Either way, it’s a big ol’ love fest up in here. I think I even feel a tear coming on. Just one, though. Don’t freak out.

To thank you for always brightening my day, I made you donuts. Pumpkin donuts, to be precise, because in case you haven’t noticed, Fall has arrived. It’s chilly out, the windows are all open, the days are getting shorter, and I’ve had to purchase new jeans for the kids because apparently they grew 14 inches over the summer. Also, my son now wears men sized shoes. He’s eleven. That really has nothing to do with Fall or donuts, but I felt it was worth mentioning. Eleven. Men’s shoes. Oh, and while we’re on the subject of my babies growing up, my daughter lost her first tooth last night. Yeah. That happened.

Back to the point. I made pumpkin donuts. Then I rolled them in cinnamon and sugar, because I have a serious weakness for cinnamon-sugar coated donuts. They’re always the best kind. Glazed are nice, but they’ll never compare to the cinnamon-sugar kind.

Oh, did I mention? There is more than just donuts in this big love fest of a blog post. There is a mini donut maker. For you! Er, one of you anyway.

I was shopping awhile back as I am wont to do, and I ran across the cutest little mini donut makers. There were also cupcake makers, whoopie pie makers, and cake pop (!) makers. I generally don’t like to buy appliances that serve only one purpose, but these were bright, colorful, and they made me smile. So I bought two. One for you and one for me.

Pumpkin Donuts

Pumpkin Donuts

Ingredients

  • 2 cups all-purpose or white whole wheat flour
  • 1/2 cup brown sugar, packed
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1/2 cup canned pumpkin
  • 2 eggs
  • 1/4 cup milk
  • 1/4 cup butter, softened
  • Cinnamon and sugar, for rolling
  • 1/2 cup butter, for dipping

Instructions

  1. If using a babycakes donut maker, turn it on to preheat. Otherwise, preheat the oven to 375 degrees. Grease a donut pan or regular cookie sheet.
  2. In the bowl of your stand mixer, mix together the dry ingredients.
  3. Beat in the pumpkin, eggs, milk, and butter until well combined.
  4. Fit a pastry bag with a large tip and fill with the donut batter. Alternately, fill a large ziploc bag and snip off the end.
  5. Pipe into the donut maker, donut pan, or just pipe in circles on a greased cookie sheet. The dough is thick enough that it should stay in the general shape you pipe it in while in the oven.
  6. If using the donut maker, cook for about 3-5 minutes, checking for doneness with a toothpick.
  7. If using the oven, bake for about 10-12 minutes or until golden brown and cooked through.
  8. Cool on a wire rack.
  9. Melt the 1/2 cup of butter in a small dish and mix together cinnamon and sugar in a second dish for dipping.
  10. Dip the donuts in the butter and then the cinnamon-sugar mixture.
  11. Store in an air-tight container.

    Holy cow, those look AMAZING! I’ve been reading you since the summer (July-ish?) and I’ve already made several of your things. My favorite – the chocolate bread with the peanut butter spread. We made it into chocolate strawberry shortcake and it was dee-lish! You rock! ;)

    I love that little doughnut maker!! Every time I’ve seen one at the store lately, I think “hmm I really don’t need that, BUT I would love to make unhealthy doughnuts all the time.” My hubby doesn’t think its a necessary purchase right now haha.
    I’ve been following your blog for at least 6 months, I think since about the beginning of the year. I found it through an article on Yahoo about cookies…..and somehow got linked to your blog for the oreo chocolate chip cookies, which I promptly made! I then made bacon pinwheels, which are one of my favorites.

    I’ve been reading you for about a month, and I cannot wait to find time to try all of your recipes… especially this one! The only thing missing is some sort of cranberry cream filling, and my tastebuds’ lives will be complete. :) Also, I would love love love a tiny donut maker. How rad!

    I started following your blog on a cold, dark, wintry evening in January or February 2010 (I remember it vividly.     I happened upon this lovely blog in april 2011 when my then fiance heard someone at work talking about oreo stuffed chocolate chip cookies. He found your post and emailed it to me to copy, and since then I have been hooked! It has gotten to the point where my hubby asks what has Karly taught you recently:)

    I think it’s been about six months or so…adore the recipes and photos, and a donut maker would clearly improve things around here! Except for the fitting into of jeans. That might not be helped. That, however, is a risk I am totally willing to take.

    Almost three years. One of the first recipes I bookmarked was the Banana Coffee Cake, from Jan of 09, which I’m sure was at-posting, and not a track back at a later date. I think that means I’ve been here since almost the beginning.

    I have a few donut recipes I have wanted to try, but no donut pan or super-duper appliance. One I saw recently didn’t need a special pan, but I haven’t been able to try that, either. Too hot.

    We need donuts. Please?

    I think I found you about a year ago. I was on the hunt for the best ever rolled, glazed sugar cookies so I could try to clone the ones made by a local bakery in my area – who actually call theirs butter cookies. I googled “butter cookies”, found your site, and made your recipe a few days later. After that, I searched through the rest of your recipes, added you to my blogger.com blog roll and come back every time you add a new recipe, as soon as I see it’s been posted.
    We bake sugary, delicious desserts with equal amounts of big fat sugary passion – you’re just a lot funnier when you post about your amazing recipes than I am! :)

    Oh man…probably 6 months or so! You were a FANTASTIC relief to nursing school stress!! I’m a stress baker so I was always looking for new treats to bake and take to the nurses I was working with and my classmates!! The peanut butter pretzel bites were the biggest hit of them all!     I found you a few days ago when I am baker posted the link to the buckeye cake on Facebook. Yesterday I tried to campaign to have that cake as our dessert for the big family Christmas dinner. You were narrowly beat out by a chocolate peanut butter trifle. If my Ohio State brother-in-law had been present, I think your cake might have pulled through. Now I just need to find another occasion to make it. I may even make up my own holiday just for that reason.

    That little donut maker is so cute!!
    I stumbled upon your site about 9 months ago. I was randomly searching for any sort of cookie/cake/pie/dessert recipes & your site came up. The Oreo Stuffed Chocolate Chip Cookies continue to be a huge hit with friends! I have several recipes saved and look forward to trying them all out :P
