Fire Roasted Guacamole

The other night I realized that it had been an entire 24 hours since I’d last eaten Mexican food. It was a sad moment.

I looked up at my husband and calmly explained to him, without a hint of panic in my voice, that OH MY GOD, WE’RE ALL GOING TO DIEEEEEEEE!

Then he gave me one of my emergency tacos and I shut up.

You see, I like Mexican food. Kind of a lot, actually.

My husband? He just tolerates it. Sometimes I’ll be all friendly-like and offer to let him choose what’s for dinner. He usually asks for something meaty served alongside potatoes. Then I’m all “Sike! We’re having Mexican!”

It’s funny, but I didn’t realize that grown men could be such cry babies. The tears! So many, many tears.

Also, do people say “sike” anymore? Do y’all even know what that means?

Anyway, the thing is, Mexican food is like a staple in our house. We eat it a lot. If we don’t have it at a meal, I like to have guac and chips at some point so that I don’t suffer from withdrawals. Life is not complete with guacamole. That’s a fact.

When I have a few extra minutes, I make this version. It’s a different kind of amazing, not as simple or quick, but still a ridiculously yummy recipe. I like it. I like it a lot.

Grilling the avocado may seem weird, but it just gives it this awesome smoky flavor. Grilled onions and corn add to that effect. You can go ahead and grill up a bit of jalapeno if you like, but personally I like my guac to be a happy, safe place. Nothing mean or spicy hiding in my recipe.

Fire Roasted Guacamole

Ingredients

  • 4 ripe Haas avocados
  • 1 ear of corn
  • 1 clove garlic, minced
  • 1/4 cup cilantro, chopped
  • 1/2 sweet onion
  • 1 lime
  • 2 tbsp sour cream
  • 2 tsp cumin
  • salt, to taste

Instructions

  1. Fire up the grill and let it heat to around 400 degrees.
  2. Slice the avocados in half length-wise and remove the seeds.
  3. Place the corn on the grill. When one side is charred, flip the corn over. Add the onion to the grill. Place the avocado halves flesh side down on the grill. Grill until the corn is charred all around and the onions are soft. Remove everything from the grill.
  4. Scoop the avocado from the peel and place in a medium bowl. Scrape the corn from the cob and add to the avocado. Chop the onion and add that to the bowl.
  5. Add remaining ingredients to the bowl and mash everything together with a fork to get the consistency you prefer.
  6. Serve warm, right after grilling, or chill in the fridge until cool.

    Actually, grown people say “psych” … just being the grammar witch for a moment.

    That said… OMG, we LURV grilled avocados! You are right about the flavor, but have never thought of adding corn to the guac. Good call!!!! Will try this once we stop getting lousy weather :(

    I shrink away and die a little without Mexican food too.
    We love grilled avocados! We might be known to fire up an entire chimney full of charcoal just to grill some avocados :)

    I wish more people said sike. Or psych. Or whatever it is. (It obviously was not meant to be spelled.)

    I also wish there were more guac in my life! Love that yours has corn in it!

    I’m this close (can’t demonstrate easily how close on t’internet post, but, like, really, really close) to changing the restaurant we’re eating at tonight to Mexican! That guacamole looks ace!

    Haha! I asked my two and a half year old tonight if he wanted a cookie, then yelled Sike/Psych.

    Now that I read this, I feel like a bad Mom. Haha!

    Sike is totally a relevant word still.

    True story–a few years ago, I started a big movement to bring back the word “sike”. (and by big movement, I mean that I told like 12 people) Anyways, it never took off. Shame.

    Guac is my go-to snack when I get home from work. I love it, and it’s completely addicting. I, however, recently began dieting. Therefore, no more snacking on guac. But this does look amazing. :)

    quick tip – always leave a few of the avo pits in the guacamole. it will keep it from turning brown so quickly :)

    hilarious! i definitely do the same thing to my husband…he’s supposed to pick what i’m thinking, duh. mexican food is definitely a staple in our house too, luckily sean loves it as much as i do.
    next time i make guacamole i will have to grill everything…i love your addition of corn!

    That looks amaaaazing. Looks like more than 1 ear of corn for 4 avocados though? I’m usually a guac purist but might have to try this. We Iowans love our corn.

    The pit doesn’t keep it from browning. The part beneath it is the only part that benefits since it’s not exposed to oxygen. Just press some plastic wrap right on top of the guac (touching it, not just over the top of the countainer). That is, if there’s any left!
