Peanut Butter & Banana Pound Cake with Nutella Glaze

You know my husband? The guy who hates cake?

He likes this cake.

He likes it a lot.

He ate it for breakfast three days in a row. I think it had something to do with the peanut butter, Nutella, and bananas.

Quick question: why can my husband eat pound cake for breakfast and not gain a single pound, but I eat cake for breakfast and need to buy new pants? It’s not fair.

One other question: A few months ago I baked with Nutellla for the first time and since then I can’t seem to stop using it in my baked goods. What happened and how do I make it stop?

Do I even want to make it stop?

As you can see, I’m feeling very contemplative this morning. What’s on your mind today? What are you thinking about and questioning? And wouldn’t you rather be thinking about it with a big slice of this cake in front of you?

Peanut Butter & Banana Pound Cake with Nutella Glaze

Ingredients

  • 1 1/2 cups (3 sticks) butter, room temperature
  • 1 cup smooth peanut butter (I used JIF), divided
  • 2 3/4 cups sugar
  • 5 eggs
  • 2 teaspoons vanilla
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 2 large bananas, mashed
  • 1 cup Nutella, divided
  • 2 tablespoons milk or water (optional)

Instructions

  1. Preheat the oven to 325 degrees. Grease and flour a bundt pan.
  2. In the bowl of your stand mixer, cream the butter and 3/4 cup of the peanut butter until smooth. Beat in the sugar, mixing until light and airy, around 5 minutes. Add the eggs, one at a time, mixing well between each addition. Stir in the vanilla.
  3. Add the flour and salt to the mixer, all at once, and mix just until incorporated. Mix in the mashed banana on low.
  4. Pour batter into the prepared bundt pan. Drop heaping spoonfuls of Nutella over the top of the batter, about 1/2 a cup. Using a butter knife, swirl the Nutella all throughout the cake to get a marbled look.
  5. Bake the cake for 60 - 75 minutes or until the cake is golden brown and a tester comes out clean.
  6. Allow cake to cool in the pan for 20 minutes, then remove to a wire rack to cool completely.
  7. Heat remaining Nutella and peanut butter in the microwave in 10 second intervals to soften it up enough to drizzle. If desired, mix in a little milk or water to thin the glaze out.
  8. Drizzle on top of the bundt cake.

    yeah, i have the same problem with my husband. he’ll eat an entire batch of cookies in 2 days and LOSE weight. I do not understand.

    And nutella is addicting!

    i’ve yet to bake with nutella yet… but the fact that your husband doesn’t like cake, but does like this one is realllllllyyy making me want to use it.

    Seriously what IS it about men and weight gain? My roommate and i tried to put her boyfriend on a peanut butter diet to see if he’d gain weight…and he lost five pounds. Weird. And unfortunate.

    Well I might have to put myself on a peanut butter and banana pound cake with nutella glaze diet. And say to hell with it all!

    YUMMY! Was wondering where the other 1/4 cup of Peanut butter was used….maybe swirled in the batter like the nutella? Or mixed in the glaze?

    Help! I made this today and followed the instructions to a T, however the inside was not done after 80 minutes of baking. I ended up taking it out because I didn’t want the outside to be crusty. I noticed some air holes in it too. I’m not an avid baker, but I thought I could follow instructions fairly well! LOL! What did I do wrong?

    P.S. It still tasted WONDERFUL even with a mushy middle! :)

    Omg. This cake was so moist and sooo addictive even with 100%whole wheat flour. A keeper in my recipe box for sure. Btw: I baked it for 75 min

    My dad, who also doesn’t like cake (weirdo), loved this cake. His exact quote was “this is dang good.” He then proceeded to sliver off about a third of it in a day. Thanks for the recipe!
