Crispy Chocolate Peanut Butter French Toast

Alright, y’all. The guest post extravaganza begins now and boy, does Jessica know how to start things off with a bang. First off, I want to mention that even though I’m probably on a big ol’ boat surrounded by warm water and bright sun while you’re reading this, I’m jealous of all of you that have access to a kitchen because that means you get make this recipe anytime you feel like it! You’re gonna love this ridiculous, absurd, outrageous french toast that Jessica from How Sweet It Is has shared with us today. I love her and her crazy, chocolate covered recipes. Enjoy!

Out of the many things Karly and I have in common, three ingredients are at the top of the list: chocolate, peanut butter and bacon. I found it only appropriate to share one of my favorite breakfasts with you: some over-the-top French toast!

This French toast is made crispy by the use of crushed cornflakes. It takes French toast to a whole new level… making it even more crunchy on the outside while the inside stays soft and melt-in-your-mouth delicious.

And the peanut butter? Well, the peanut butter gets melted and smashed in between each layer, then drizzled on top. And as if that isn’t enough, splatter a few spoonfuls of melted chocolate on top to finish it off.

I’m not sure if this is breakfast or dessert, but since I like to eat dessert for breakfast, it certainly works for me.

Oh, and this recipe may not have bacon in it, but a few pieces on the side won’t hurt. Or a few pieces layered in between the bread? The possibilities are endless!

Crispy Chocolate Peanut Butter French Toast

Ingredients

  • 4 slices thick bread
  • 2 tablespoons butter
  • 3 whole eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 tablespoon cinnamon
  • pinch of salt
  • 1/4 cup sugar
  • 1 cup corn flake crumbs
  • 1/4 cup peanut butter, melted
  • 2 tablespoons chocolate chips, melted

Instructions

  1. In a large bowl, mix eggs, milk, cinnamon, salt and vanilla. On a plate, add corn flake crumbs and sugar, and mix well.
  2. Preheat a large skillet on medium-low heat. Add bread to egg mixture and let soak on each side for about 60 seconds. Remove from egg mixture and thoroughly dredge through corn flake crumbs. Add 1 tablespoon butter to skillet and add bread. Fry until golden brown on each side, about 2-3 minutes each. Repeat with additional bread, using remaining tablespoon of butter for the next 2 pieces.
  3. Layer and top French toast with melted peanut butter and chocolate. Devour!

This looks so good and decadent and so rich… I wonder if I could eat that for breakfast!

Is the peanut butter “natural” or full of sugar, salt and hydrogenated oil?

I am dying, seriously. Can I justify making this right now, considering that I’m the only one home?

this is probably the most sinful and enjoyable way to start the day that i’ve ever seen. cinnamon rolls? not as decadent. pancakes with chocolate chips? not even close. bravo.
