Baked Potato Salad
I think you all know of my never-ending love of bacon and cheese, but just in case: I love bacon and cheese, forever and ever, Amen.
Potato salad around here usually means cold potato chunks, mayo, boiled eggs, and some pickle relish. It’s delicious like that, it really is. I would never, ever turn down a big ol’ bowl full of my grandma’s potato salad. Sometimes you have to experiment though. Sometimes you have to try new things. Sometimes, just every now and then, you have to add bacon to your potato salad.
I saw this recipe at One Ordinary Day last week and I knew immediately that I was making it for Sunday dinner at my parent’s house. It didn’t matter that hashbrown casserole was already on the menu. If some potatoes are good, more potatoes are better. That’s the truth.
The only thing I changed from recipe was to use big baking potatoes and actually bake them instead of boiling them. It is, after all, baked potato salad.
Baked Potato Salad
slightly adapted from One Ordinary Day
- 1 1/2 pounds baking potatoes
- 1/2 cup mayonnaise (not Miracle Whip!)
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped chives
- 1 pound bacon, cooked and crumbled
- salt and pepper, to taste
Pre-heat oven to 425 degrees. Bake potatoes for 1 hour, or until done. When cool enough to handle, chop potatoes (skin and all) into bite sized chunks. Place in refrigerator until chilled through.
In a large bowl, combine the remaining ingredients and mix well. Stir in the potatoes, coating each piece with the mayo mixture. Garnish with a sprinkling of chives. Serve cold.

















Anything that calls for a pound of bacon is good by me.
I created a Baked Potato Salad recipe after tasting something at a restaurant that was delish…and I’m not normally a Potato Salad eater…certainly not the mustardy kind of potato salad. Blech. But we had a dish at a barbecue place once that had a potato salad that was unique – it didn’t have any mustard in it! Yay! My husband and I both loved it, so I came home and started playing around until I created something that was spot on to the restaurant’s version. And it’s a good thing I did..they went out of business soon after we ate there!
Anyway, my version is VERY similar to yours!
Ooo.. this sounds right up my ally. I love baked potatoes and potato salad. Putting the two together would be heaven!

one thing i loathe is waiting for a potato to bake–i’m impatient like that. this is fabulous–i can make a massive batch of it and have it waiting in the fridge so when the craving hits, bam–instant gratification. excellent.
oh yum. This is how I make my potato salad but I’ve never added bacon or cheese before. This sounds so delicious! I’m having a birthday party for my daughter tonight and think I might have a late addition to my menu!

EVERYTHING’S better with bacon….and cheese
Cook and crumble bacon? I’ve seen so many cooks cook strips of bacon and then crumble it for use in a recipe. I just cut the bacon up raw and then I cook it, so much easier, you can cook the entire pound in a 10 inch skillet all at once. The baked potato salad sounds good, it’s on my to cook list.

Bacon is possibly my husband’s favorite food, but mayo isn’t. So when I made this, I knew I’d get it ALL to myself. Delicious, so easy to have for a quick snack. Thank you!!
So I’ve made this twice now…the first time, I did bake the potatoes, but wasn’t crazy about it. So the second time, I just boiled the potatoes like I would for “regular” potato salad, but left everything else the same. LOVED it! I think it’s a texture thing…
I also served it still slightly warm, and we used “spring grass” cheddar cheese, which added just a little bit of sweetness with the bite of the cheddar. YUM!

I actually had my first ever baked potato salad from (yes, I’m embarrassed to admit) Wal-Mart’s ready-to-go food section. But you know, it was truly delicious & I decided I HAD to make it. I had a general idea of how, but after I threw my potatoes in the oven I figured I’d look around on the web to see if I missed anything. I can’t wait to have this tonight with some homemade Italian sausage patties & some steamed broccoli!

Yes, I too have bought his potato salad at various grocery deli’s.. but it’s so expensive.. I wanted to make it myself since I love to cook… I abhor fast food and wasting money at restaurants…. AWESOME recipe…. MMMMMMM BACON !!!!!!!!!!!!!!! Must be a guy thing, or maybe not, lol
