Good Ol’ Homemade Brownies


This may be a cooking blog, but I find myself sharing some of my deepest, darkest secrets (never having tried oatmeal before, for instance) here. So far you all have accepted me and all the horrible things I’ve kept hidden for years and years. I can only hope that you will continue to stand by my side as I reveal this next bit of private information about myself.
I prefer my brownies to be made from a box mix.
I’m sorry, okay? It’s just who I am and I have to be me. Writing a cooking blog isn’t going to change who I am. It just won’t, okay?
Except, well, I’ve recently discovered a brownie recipe so beautiful and delicious and rich and fudgy and chocolatey and oh goodness, I should just go ahead and admit it. I’m over the box mix brownies. No more, I say! No more!
Just go ahead and scroll back up there and look at those brownies! So full of chocolate! So gooey! So fudgy and scrumptious!

This recipe starts out by melting butter and sugar together in a sauce pan, and I know, there are lots of one bowl brownie recipes out there, but these guys are worth the extra dirty dish. Especially if your kids are your dish washers.
You’ll need to prepare yourself for this next part. You’re going to dump the cocoa powder into the sugar and butter. You’ll want to shove your entire face into your mixing bowl, but don’t do it. The butter is still hot and if you eat it all, we won’t have brownies!
Alright, so one lick won’t hurt anyone.

After you’ve mixed in the remaining ingredients, pour the batter into a buttered 9×13 pan and bake for about 30 minutes. What comes out of the oven is this amazingly delicious chunk of gooey, warm, melty chocolate. Let it cool and then slice and devour!
Good Ol' Homemade Brownies
Ingredients:
1 cup (2 sticks) butter
2 1/4 cups sugar
4 large eggs
1 1/4 cups cocoa powder
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon espresso powder, optional
1 tablespoon vanilla extract
1 1/2 cups all-purpose flour
2 cups semi-sweet chocolate chips
Directions:
Pre-heat the oven to 350 degrees. Butter a 9x13 baking dish.
In small saucepan over low heat, melt butter completely. Stir in sugar and continue cooking for 1-2 minutes, stirring constantly. Do not allow sugar mixture to boil.
Pour butter mixture into a large bowl or stand mixer, beat in cocoa powder, eggs, salt, baking powder, espresso powder, and vanilla extract. Mix until well combined.
Stir in the flour and chocolate chips until well combined.
Spread into prepared pan (batter will be very thick and sticky) and bake for about 30 minutes, until a tester comes out mostly clean. The edges should be set and the center should still look slightly moist, but not uncooked. Cool on a wire rack.

Buckeye Brownies. Brownie base, peanut butter layer, and a chocolate ganache topping. Get in my face.
Nutella Brownies. Super fudgy, with three types of chocolate – Nutella, chocolate chips, and cocoa!

If you haven’t you should order their Fiori de Sicilia – gorgeous orange-cream-vanilla extract. Even if you don’t cook with it – wear it as perfume!!

Brownies are one of the most difficult things to photograph.. you made yours look scrumptious.

Make these and you’ll be hooked. I do the sugar/butter in the microwave rather than on stovetop. Melt the butter and then add the sugar and microwave about two more minutes. You don’t want it to boil. After mixing everything add the chocolate chips if you want them to melt into the brownie. Otherwise, wait about 20 minutes and then add them to the mix and bake.
If you take them out of the oven the minute the edges are set and firm, they will be fine. These are fudge style brownies and should be a bit moist in the interior. Use the best quality chocolate chips you can find – the price difference is minor and the taste is even better.

I’ve tried lots of different homemade brownie recipes, and this is by far the best. Rich and chewy and delicious! Thanks for the recipe Karly. (and watch them at the end, I think I overbaked mine by a couple minutes-the edges were a little bit dry, but the inner ones, perfect) I think I am going to buy one of those ‘perfect brownie pans’ that I see advertised on TV.
Don’t think I will be going back to boxed brownies… these were almost as easy, and tasted much better.

OH. MY. GOODNESS. I always stick with box brownies because i’m too cheap to buy fancy cocoa powder or flour or chocolate chips. But I used all my bargain brand ingredients to make these, and they were HEAVEN. I have NEVER, NEVER had a brownie so delicious. thank you for this recipe!!!!!

I just pulled these from my oven and the smell in my house is AMAZING!!! It actually enticed my husband out of his office to investigate! They are cooling right now but I’m dying to try them!
I admit it. I am a boxed brownie mix fan too. But these looked like pure chocolately heaven in the picture. I talked the husband into making them
(yes, he’s the cook of the family). And OMG, they are a little slice of chocloately heaven here on earth. Next time he is going to omit the chocolate chips and drizzle peanut butter on top before baking. I can’t wait.
Made them last night! So good, everything you want in a brownie and more. I tried them with dark chocolate cocoa powder and milk chocolate chips which made things really interesting (I’m thinking some white chocolate chips might be good in there as well?)

I have been drooling over these for weeks, so I finally went and made them last night. Oh my god, they were so worth it. I think this batch is going to last forever too! They’re so rich and enormous that I don’t even need to eat more than one, and that’s coming from someone who has a crazy metabolism and eats tons of everything (especially chocolate). Okay, I’ve now made these three times and am still wowed. I’ve officially dubbed them “the finest brownies in all the land.”
I’ve also cooked brownies in the microwave. Haven’t tried it with this recipe yet, but I will. It’s a great technique for when 30 minutes in the oven is just too long!

brownies sure look good. mine are gooey like your’s also, except i cheat.
i get the boxed stuff then add hershey’s syrup and dark chocolate chips or chunks. after it is all mixed and ready for the oven i sprinkle more chips on top and the line the top wit criss-crosses of the hershey’s syrup…..is superb………..

Made these last night. They are SO awesome. Unfortunately, I’m getting used to a new oven which cooks really hot, so they are cooked through. I prefer to leave the centers a little softer. But with that said, I still think they’re great. Easy to make.
I too was a boxed-brownie-only kind of person, but I love making everything I can from scratch. This recipe is a keeper! Next time I’m thinking of dotting the top with a little caramel or peanut butter (or both!)
Also, since I’m baking for just me and my boyfriend, I wrapped half the batch in plastic wrap+foil, then placed them into a baggie for freezing. Who wants to cut such a great recipe in half?
